From one of the nest plots in Celles-sur-Ource. In old dialect, dating back to before 1900 according to the older members of our community, the name « les Bondonnots » meant « bonnes bondes », which referred, in the somewhat poetic language applied to wine making, to the aromas that impregnated the bungs (bondes) used in barrels of wine from this particular plot. The plot is located more than 200 metres above the village. In the past, the plot was worked by horse, on foot or even by bicycle. One can’t help but admire the exceptional dedication of the vignerons who climbed the considerable slope to work this plot, especially since there was no shortage of plots lower down nearer the village.
